3 Agriculture in Idaho Nature s bounty provides ideal growing conditions for Idaho agriculture. With over 185 commodities grown and produced in the state, agricultural production in Idaho is often described as plentiful and diverse. Available land, abundant feed, clean air, and strong transportation systems make Idaho one of the top dairy producing states in the nation and dairy Idaho s leading agricultural industry. As dairy farms are on the rise in Idaho, so is the number of dairy processing facilities located within the state. Idaho s top dairy products include cheese, dry milk, whey, butter, whey proteins, lactose, and yogurt. Idaho s dairy products are exported around the world and are the number one agricultural export for the state. From commodities such as potatoes and grains, to specialty crops such as fresh fruits, mint, and onions, Idaho farmers combine natural resources with state-of-the-art technology and equipment to produce superior quality food and agricultural products. A comprehensive transportation system including railhead, interstate highways, and an inland seaport link Idaho s agriculture with the nation and the world. Leading the nation in potato production, Idaho s growers produce over 100 million hundredweight of potatoes each year. Idaho s growing conditions give farmers the competitive advantage in producing the best potato in the world high solid count, the secret for fluffy bakers and firm French fries. Over 50 percent of Idaho s potato crop is processed into potato flakes, hash browns, French fries, and specialty items. Wheat is one of Idaho s top exports, with approximately half of the total crop being sold to foreign markets. Idaho is one of the few places in the world where buyers can find all five classes of wheat in one location. Quality control is easily maintained in this region, thus placing Idaho s wheat, dry peas, and lentils in high demand in world markets. Fruit crops including sweet cherries, apples, peaches, apricots, plums, and table grapes thrive in Southern Idaho. Apples are the state s number one fruit crop topping 150 million pounds per year. United States beef has a world-wide reputation for high quality. Custom feeding practices are what give U.S. beef its consistent quality, pricing, and supply. Idaho s superior Kobe-style beef is available in high-end restaurants, hotels, and retail chains in the U.S. and around the world. Exacting production practices, soil management, and harvest timing make Idaho s alfalfa hay among the best in the Pacific Northwest. Whether pelletized, cubed, or in compressed bales; consistent quality is assured through field sampling and laboratory analysis. Idaho s unique combination of geography, climate, and soils produce wine grapes of exceptional flavor. The Idaho wine industry has been steadily growing for the last 30 years with remarkable growth in the past decade, and is quickly becoming known for its award winning wines. Common varieties grown and produced in the state include Riesling, Cabernet, Merlot, Chardonnay, and sweet ice wines. Idaho s dairy farm families have a proud heritage of providing healthy and wholesome dairy products. Moreover, all but one of Idaho s dairy farms are family owned and many farms are multi-generational. Dairy is the number one agriculture industry in the state. Idaho is the third largest milk producing state in the U.S. In 2011, on-farm cash receipts from milk produced on Idaho farms amounted to USD$2.446 billion dollars. Today, Idaho s dairy industry employs more than 22,730 individuals in the production, processing, transportation, and distribution of its milk and milk products. Idaho is also a major cheese processor ranking third in the U.S. in the production of cheese. Idaho cheeses include American cheddar, Colby/Jack, Italian cheeses, cream cheese, cottage cheese, and pasteurized processed cheese. In all, Idaho produced over 387,000 metric tons of cheese in Idaho produced nearly 180,000 metric tons of whey products in 2011 including dry whey, whey protein, whey protein isolate, whey protein fractions, permeate, lactose, and deproteinized whey. Dry milk products produced in the state include non-fat dry milk, skim milk powders, milk protein, and dry buttermilk. Total dry milk production in 2011 exceeded 124,000 metric tons. Other milk products available in Idaho are butter, dry cream, sour cream, dry milk calcium, cheese powder, ice cream, and ice cream mixes. The dairy industry provides significant resources to support research and promotion needed to stabilize and sustain Idaho s dairy industry. In 2008 the company began producing Nonfat Dry Milk from their new Burley, Idaho facility. The focus at High Desert Milk is quality, and this means being in control of every facet of dairy operations from the field to the fork. A majority of all the feeds used is raised on our own farms. Milking operations are monitored for quality by our own, in-house, state-certified lab facility. Milk is hauled by High Desert s fleet of tankers daily, and delivered directly to the plant for processing. The haul is local, since all dairies are located less than 30 miles from the facility. All milk is received and processed the day that it is delivered, allowing us to produce a quality low spore, heat-stable product that can be used in a variety of applications including infant formula.
