Its international theme is cemented in the menu printed in English, Chinese, Korean and Japanese. But dining at a worldrenowned restaurant comes with a pricey tag: most of the restaurant s signature baozi dishes will run customers around CNY. 11 Dining Interview A Jewel of the Community Interview with Daygan Sobotka, Creator of The Spot Cafe allow both westerners and Chinese to learn and understand each other s culture better. The Spot Cafe is an American café/ coffee house located near Tianjin University. How did you come up with the name The Spot Cafe? There was a coffee shop in Rochester, New York where I went to school called Spot Coffee, but me and my friends always called it The Spot. I thought the name was fitting because I wanted to create the spot where anyone could come and hang out. How does your ability to speak fluent Chinese help you to better connect with customers? It allows me to speak directly with my customers and express my personality and meaning more effectively. However, I think my Chinese fluency is most advantageous in allowing me to guide and manage the staff especially regarding service and quality expectations. How does The Spot Cafe encourage the creative arts and cross-cultural communication? The Spot Coffee hosts open mic night the first Thursday of every month at 8pm. In gives local artists the opportunity to come and display their talents in everything from singing songs to reciting poetry. We also give local artists the opportunity to display their art which decorates our walls. We have monthly cultural events. In the past we ve done Beijing opera-style face painting and a kung fu performance. We feel that the arts and cross-culture communication What makes The Spot Cafe different from other coffee houses in Tianjin? One main difference between our coffee shop and others is that we operate in more of an American style in which customers can get coffee at the counter and then they can do what they want. This affects the atmosphere and gives hosts a feeling of freeness. We don t have any booths. Instead we try to offer a more open environment. You might come alone but because you are surrounded by people, you feel like you re part of the community. So you re never really alone. What are your future plans for The Spot Cafe? Our upcoming plan is to beautify the outside area and the patio, for the sake of the community. I hope as we make our exterior more attractive, it will encourage other businesses to beautify their store fronts. In the future we d like to create more events and get the local community more involved. 13 Dining Interview Experience the French Spirit Interview with Boris Orgogozo, GM of C est La Vie est La Vie is an upscale French C restaurant located in Shanggu that invites guests to discover or remember the French cuisine in a relaxed, lounge atmosphere. Boris Orgogozo, a French native and Tianjin resident, has owned and operated C est La Vie for more than 7 years now. What inspired you to open a French restaurant in Tianjin? I originally started working for a French company whose Chinese headquarters were located in Tianjin. When the terms of that contract concluded, I decided to stay in Tianjin because I liked the city and the people and could foresee a bright future here. I started my business selling wine. At the time there were no other western-style restaurants that were affordable with authentic food so I decided to open up C est La Vie. How did you incorporate elegance and sophistication when decorating your restaurant? It s a family thing. My mother was an artist and musician and also had a restaurant. Growing up in this kind of environment gave me inspiration in designing my restaurant. I wanted to design a restaurant that was comfortable and classy without being too stuffy. Purchasing materials, however, was a constant challenge to find the materials and decorations I wanted. Even working with the construction team I had some difficulties in expressing my vision to them. What percentage of your ingredients are imported versus purchased locally? Currently we have more than 50 suppliers. About 50% of our ingredients are imported with the majority of the alcohol and wine coming from abroad. We are currently working with a French butcher in Beijing that produces and processes the meat the same way as it is done in France. Therefore, we are able to offer a unique, quality meal. For those unfamiliar with French cuisine, which dishes would you recommend? The onion soup is an absolute classic as well as the home-made goose liver terrine, which is appreciated by the pallets of both our Chinese and foreign guests. Most Chinese guests will try the beef tenderloin and are pleased, but obviously the cheese is a must try as it comes from France. Do you have any plans to offer any activities? We have done events with Tianjin Expats. Every Friday night is DJ night starting at 10pm. We currently have over 10 DJs that play everything from house music to happy tunes and rock and roll. 15 Dining Reviews Chitose 千登世 A Water Front View hitose is an upscale Japanese restaurant located across the street from the main gate of the Tianjin Zoo. CThis elegant restaurant prepares the finest in Japanese cuisine with ingredients imported from all over the world. Chitose has several locations throughout China and Japan, the most famous of which is its location in Hong Kong, which has been in business for more than 20 years. Chitose s menu provided in English, Chinese and Japanese offers two types of cuisine: authentic Japanese and teppanyaki, both beautifully presented and cooked to perfection. Some of the selected favorites were the savory roasted Japanese Matsusaka Beef, tender foie gras, and the Matutake Soup, which contains the world s most expensive mushroom. The sushi sampler includes a variety of the freshest fish including salmon and codfish along with four signature sauces for experimenting with different tastes. With a priority on authenticity, more than 80% of the cooks are Japanese or at least have spent several years training in Japan. With outstanding quality food and service, Chitose commands a premium price. Most patrons can expect to spend at least a couple hundred yuan per person. The restaurant has many party-sized areas ideal for relaxation with friends and entertaining clients. Also featured is a patio area located on the balcony of the restaurant that offers a beautiful scenic view of the water park. Committed to the love for art, our prices aren t too expensive when compared to other tea places. One of our reasons to exist is to let people savour the moments. Do you have any special teas? In southern China, the understanding and knowledge of tea is more comprehensive than in other parts of the country. We decided to extend that knowledge to Tianjin. We have teas from Fujian and Guangdong provinces that no other tea house in Tianjin has. Do you believe your shop is prepared to receive foreign costumers? We are. We have a daily average of 15 to 20 customers. Sometimes foreigners also visit us. I took the initiative of preparing a list of some of the tea ceremony s processes in English for their better understanding of this ancient Chinese art. When was Jiu Ming Tea House established? We opened doors about six years ago in this culturally famous area of Tianjin, Changde Dao. Why a tea house? The owner s father, Mr. Yu Fuqian, is a very famous artist in China and around the globe. His Chinese paintings are prodigious. He s also an art teacher in Nankai University. World leaders have some of his paintings, including the former American President George H. W. Bush. Given all his acquaintances and friends, he decided that there should be a place to welcome them all in a very particular Chinese way. A tea house would be the perfect setting. What distinguishes Jiu Ming Tea House from other tea houses in Tianjin? I believe our main difference is the fact that Mr. Yu Fuqian displays his art in the shop. Interview with Andres Krattinger, Manager of Brasserie Restaurant, Renaissance Tianjin TEDA hotel fter gaining 12 years of Aexperience in hospitality management in the US and Europe, Andres moved to China to experience a whole new world. Defining himself as a people s person, he felt that there would have been nothing more interesting than meeting people in China and understanding their taste buds. Do you find any difference in dining options prevalent here and in the west? Yes, I must say its quite different. China, with a 5000-year-old culture, has a uniqueness in its dining compared to the west, but the good part is many Chinese guest here are now liking the idea of combining Chinese with western dining. Which skills do you enrich your staffs with? Friendliness and dish recommendation to our guests. We give staff the opportunity to taste food so that they understand the zest of different cuisines and can help recommend them to our guests. How do you encourage people to spend money on dinner? Being the most expensive restaurant here in TEDA, we put emphasis on maintaining high quality standards and service. We serve imported meat and exclusive drinks, have trained staff and a good atmosphere which truly make the dining experience here worth it. Do you plan to open your own restaurant in future? I have always dreamt of first becoming GM of a hotel and then opening my own little restaurant on a beachside in the Caribbean. But there is still a long way to go! Tell us more about the special buffet at Brasserie? Tuesday is Mexican night, Friday is Mediterranean night wherein all recipes come from the Mediterranean. On Sundays we have Australian Barbeque Grill night and on Sunday a special brunch where I usually see many TEDA expatriates who come to meet and eat together. What about Chinese cooking inspires you? The contrast and the variety they put together are really inspirational. I tried turtle soup once; I was very impressed by it. When not working what do you like to do? I often go the Cultural Street downtown. I like the sculptures and have always been fan of Chinese calligraphy. Besides this, I play Rugby on some Sundays. Any interesting experiences during your stay here? Once I saw one of our guests putting all the buffet dishes in one single plate that was so neatly and beautifully organized, I have never seen such an art with food before. If given a chance to cook for a celebrity, who would it be? He would definitely be Arnold Schwarzenegger, governor of California, as his life journey to becoming governor has always been an inspiration for me. If TEDA were a dish, which dish would describe it the best? 22 Nightlife Reviews Broadies Tavern 部落地西餐吧 Look for the Lucky Clover roadies Tavern, formerly Bknown as Broadway Café, has been in business for 11 years and has the distinction of being the first food and beverage joint venture registered in Hexi district. Located on Bar Street, this Irishthemed restaurant/bar offers an international menu ranging from American to Italian. Broadies also often features specialties from other nations, such as Germany. Fajitas and pizza are consistently the most ordered items and are definitely a must try. American-owned and operated, Broadies definitely lives up to the American style by serving large food portions and stiff alcoholic drinks. For entertainment and leisure, Broadies offers a patio area and pool tables. At 10 o clock each night, the mellow sounds of Broadies jazz band fill the air. Fans of Broadies can look forward to two more bars and a restaurants opening by the end of the year. Broadies prides itself on authenticity by offering genuine food with quality service in a family-style environment. Scooter s clientele is predominately expats but more locals have begun visiting the bar to experience American nightlife. Billy Morrison, the bar s manager, has been a long time local of Tianjin and enjoys striking up conversations with guests. Trained in the American standard of service, the wait staff at Scooter s is attentive without being overbearing, and is also fluent in English. Rock music usually takes command of this environment but Billy will gladly play any request. Sticking true to the American culture, Scooter s offers spicy chicken legs, sandwiches and chips and salsa as part of their snack food menu suitable with beer. Until the early hours of the morning, many Scooter s patrons enjoy relaxing with friends while enjoying ice cold draft beers. Drinks are reasonably priced with Happy Hour until 7:30pm in which bottle beers are buy one get one free (25 CNY). Because the bar has no booths, it lends itself to a more open environment in which guests can feel free to roam around and meet others. 23 Purple Bar 葡吧 Purple Passion L ocated on the 2nd floor of the Radisson Hotel is Tianjin s newest and trendiest cocktail bar, Purple Bar, offering guests a gorgeous view of Tianjin s nightscape. The bar s interior is just as impressive. The bar s signature drink is the Purple Passion, a combination of grape juice, grapefruit juice, and vodka. Saturday nights are Ladies Night, which means all ladies can receive one free Purple Passion drink. On Friday nights, anyone who wears or brings a purple colored item can receive a complimentary Purple Passion. Tuesday through Sunday, Purple Bar hosts a live band playing American and Chinese classics. Also featured is snack food with a firstclass touch. For example, patrons can enjoy Greek quiches, hand-rolled sushi, or deep-fried filo cheese rolls. Drink prices are comparable to other bars but Purple Bar is definitely a more chic, stylish environment than most. Purple Bar is a recommended date place. Highlighted J&B whiskey stands on display, as do photos of regular clientele hung upon the walls. The menu offers a variety of inter-national food, including the chef-recommended, vegetarian, low-fat, sugar-free dishes. Weekend bar-beques and seafood buffet dinners are the most awaited and include a variety of salads to start followed by a good choice of soups and main courses, winding up with a scoop of Italian gelato. Make your way upstairs for a little privacy or to shoot darts. The menu is moderately priced, except for a couple of dishes, and the buffet ranges from 48 to 68 CNY excluding drinks.
