But in addition to spectacular mountains, breathtaking whitewater, world-class skiing, and a dynamic agricultural industry Idaho is becoming known for its wine. Idaho s unique combination of beautiful geography, climate, and fertile soil produce grapes of exceptional character. Idaho s climate is characterized by cold winters and long summer days perfect for optimal grape production, and in the Northwest, Idaho has some of the best growing conditions for wine grapes. Summer temperatures in Idaho can vary 10 C- 20 C, ranging from over 38 C during the heat of the day to 18 C at night. This variation is critical as cooler night time temperatures allow the grapes to retain their acidity important for the wine s taste, fruity character, and balance. Although Idaho is considered a relative new-comer to the wine industry, the state has had a long history of winemaking. Vineyards in Idaho were planted in 1863 the first in the Northwest. Today wineries are opening in Idaho at a record-setting pace and currently there are 50 wineries with over 1,600 acres of vinifera grapes planted throughout the state. Idaho s growing wine industry has not gone unnoticed. In April 2007, the U.S. Alcohol and Tobacco Tax and Trade Bureau designated Idaho s Snake River Valley as an American Viticulture Area (AVA) an important distinction that brands the southern portion of the state as America s next great wine region. The designation allows vintners and consumers alike to attribute a given quality, reputation, or other characteristic of a wine made from grapes grown in an area to its geographical location. The Snake River AVA covers over eight thousand square miles and extends along the Snake River region in southern Idaho. The area s geologic history, elevation, surrounding mountains, and cold continental climate are some of the unique viticulture characteristics that led to the Idaho s first AVA designation. What makes Idaho wine so unique? It s the environment and Idaho s people. Michelle early in her career. Melanie started her career in the vineyards of Washington state and soon received an opportunity to apprentice as winemaker for the world famous Chateau Ste Michelle Winery. After five years of winemaking she had been promoted to Assistant Winemaker and set her sights on her hometown of Boise, Idaho. Over the years she had been traveling back to visit her parents who still lived in Boise. During this time she had been visiting the vineyards of the Snake River Valley, which surround Boise, and she liked what she saw. In 2005 she moved back to Boise, got married to her boyfriend Joe Schnerr and with his help started Cinder. The husband and wife team chose the name Cinder because of the layers of volcanic rock or cinder that are found under many of the vineyards that they work with. From their first release in 2007 Cinder has been receiving great reviews from local, regional and national wine reviews, including Wine Press Northwest, Food & Wine Magazine and the North West Wine Summit. Most recently Wine Business Monthly name Cinder one of the Top 10 Hot Small Brands of North America. The two varieties I m most excited about are Viognier and Tempranillo. The challenge with Viognier is to not get the grapes too ripe, where the flavors can become flabby. We ve been able to work closely with some great vineyards so that our flavors have a nice crisp finish. Hells Canyon Winery is a second generation family owned business and produces limited edition, award-winning wines under the Hells Canyon and Zhoo Zhoo brands. The Robertson family planted Hells Canyon vineyards in 1981 above the banks of the Snake River, overlooking the Owyhee Mountains. The elevation at the site is 900 meters. Varietals include Chardonnay, Cabernet Sauvignon, Merlot, Cabernet Franc and Syrah grapes. Sixty-five to eighty-five tons are harvested annually. The protected Treasure Valley is also influenced by marine air flowing from the Pacific along the Columbia and Snake Rivers which moderates the mountain climate enough for grapes. Ancient volcanic soils contribute to good drainage and trace elements and also allow for deep root penetration. The big Idaho sky is full of sun, encouraging ripe fruity flavors. Natural acid balance is achieved during the cool ripening month of September when temperature differences between daytime and nighttime elevate sugar levels while maintaining the natural acids. Hells Canyon wines have featured fine sporting art, limited-edition labels. Steve and Leslie Robertson have three daughters who were raised, predictably, in the wine business. They spent their childhoods working in the vineyard and winery which instilled in them a solid work ethic and knowledge of wine production from the soil to the shelf. The sisters, Bijou, Jocelyn and Hadley then spent the last 10 years pursuing a variety of educational, recreational and career paths. The sisters returned to the wine business in Women between the ages of are the largest wine buying segment of the U.S. population and the Robertson girls believed that making a product that would appeal to this market a market they were part of was an opportunity they couldn t resist. Aware of the potential of fruit grown in this area, Greg and Andy planted an orchard and vineyard in the same year. Over the past 15 years, the Koenigs have earned the reputation as one of the region s top producers for their focus on quality and continuous determination to raise expectations for wines and spirits from America s newest viticultural AVA, the Snake River Valley. Koenig Vineyards has won many awards in national and international competitions, garnering over 65 medals, and in 2005 was named Idaho Winery of the year by Northwest Winery magazine. Two Koenig wines, Syrah and Riesling Ice Wine, have been awarded the highest scores ever given to an Idaho wine by Wine Spectator magazine (87 and 86 points, respectively). Ice Wine Riesling Koenig s Ice Wine is made from Riesling grapes from the nearby Windridge vineyard, which is Idaho s oldest vineyard. The site consistently produces grapes of great flavor, and since 2002 Koenig has left a few select rows of grapes to hang on the vines until winter. When they are completely frozen, they are hand-picked and taken to the winery to be pressed immediately. The icy grape berries yield only a little juice under great pressure, with the majority of their moisture frozen and left behind as ice. The resulting juice is immensely sweet -up to 44 degrees Brix - and very concentrated. The juice is then left to settle and is cool fermented with a special yeast developed in Austria for Ice Wine. As the sugar content is high and the temperatures low, fermentation continues over two months at a snail s pace. Toward the end the yeast simply cannot survive the high sugar levels and alcohol it has produced and dies off, leaving a large amount of residual, or left over, sugar behind. The wine is then aged in a stainless tank for six months. After cold-stabilization, filtering and bottling, Koenig typically releases Ice Wine one year after harvest. White wine: Viognier, Chardonnay, Riesling, and traditional ice wine Red wine: Cabernet Sauvignon, Merlot, Pinot Noir, Syrah and Petit Verdot and Petit Sirah are used for blending Syrah Cabernet Viognier Riesling Sauvignon

The vineyard is planted with Merlot, Chardonnay, Syrah, Gewürztraminer, Viognier and a small block of Zinfandel. The unique layout of Parma Ridge allows the varietals preferring a cooler climate, such as the Gewürztraminer, to be planted on a northeast slope, while the red varietals are planted in the warmer sections of the vineyard. Due to the cold winters that control insect populations, all vines are planted on their own roots, thereby preserving the true varietal flavor of the grape. The vineyards and winery are located on 9.5 acres at an elevation of 800 meters, overlooking the Boise River in Parma, Idaho. All Parma Ridge wines are produced and bottled at the winery on site, allowing the grapes to be processed within a very short time of harvest. Parma Ridge Vineyards is owned and operated by Dick and Shirley Dickstein. Dick is the winemaker and Shirley handles design and marketing. Parma Ridge produces a wide range of wines including: Merlot, Syrah, Cabernet Franc, Gewürztraminer (dry), Viognier and Chardonnay. There are also several blends including one of the favorites of our customers: Mélange, which is a Bordeaux style blend of Merlot, Cabernet Sauvignon, Malbec, Cabernet Franc and in the 2006 vintage Petit Verdot. All grapes with the exception of the Cabernet Sauvignon and Petit Verdot are grown on the estate and all wine is produced at the winery on the estate. Most of the wines are packaged in 750ml bottles but some varieties are also packaged in 375ml. All wines are sealed with natural cork; not screw caps or plastic. The wine can also be labeled with custom labeling if local law permits.
