Hainan Island is a paradise. Sandy white beaches, tubular waves and ice cold coconuts. Every inch of its fertile soil nestles the most exotic fruit & produce every chef and bartender can dream of. We were blown away by the quality and array of ingredients ever since the first time we stepped foot on the island, since then, our team has carried out 3 research trips, exploring the inlands, rainforest and plantations searching for inspirations on our new menu. COCONUT PALM Coconuts are grown around 20m inland from the beach, where there is full-sun and the soil is less rocky and well-drained with plenty of sea-breeze.
