Totl bcteril count (TBC, cid vlue nd peroxide vlue t different storge tempertures (30, 35 nd 40 were ccessed to reserch the reltion between the shelf life nd temperture. The kinetic models of TBC, cid vlue nd peroxide vlue with respect to preservtion time nd temperture were estblished bsed on Arrhenius eqution. The high regression coefficients (R 2 >0.9 indicted the cceptbility of the first order rection nd Arrhenius model for predicting the chnges of TBC, cid vlue nd peroxide vlue of dried P. polyctis. Activtion energies ( nd rte constnts (k 0 of TBC, cid vlue nd peroxide vlue were obtined. They were 29.26kJ/mol, 4.46 10 2, 47.05kJ/mol, 4.1 10 5, 49.76kJ/mol, 1.53 10 6, respectively. Compred with observed shelf life of P. polyctis stored t 37 nd 42, reltive error between predicted nd observed shelf life were 4.68% nd 6.25%, respectively. Shelf life of dried P. polyctis ws 500 dys t 20 nd 352 dys t 25 through extrpoltion of Arrhenius eqution.
