(The Old Waldorf Astoria bar book, 1935) 昔日君子风度, 一饮天下甘醇, 仍可谈笑鸿儒 ( 出于 1935 年华尔道夫旧版酒吧指南 ) WELCOME TO THE LONG BAR The Shanghai Club, opened on 6th January 1911, was famed for its Long Bar and it was long stretching 110 feet 7 inches along the south face of the building. The established taipans, or big bosses, would gather at the end of the bar near the waterfront whilst newcomers to Shanghai, known as griffins, would be relegated to the murky depths of the tavern. The club s brand of respectable hospitality was far from open to all. When Club chairman, W.A. C. Platt, opened the building, he asserted that it was to be run on the principle of the greatest happiness of the greatest number. Membership was hugely expensive and subject to a members ballot where four out of five had to be in agreement. Women, of course, were not permitted to enter and were only admitted on very rare occasions throughout the Club s History. 7 WALDORF CLASSICS 华尔道夫经典 These cocktails were served when the Waldorf Astoria Hotel was just the Waldorf and it stood where the Empire State Building stands today, it was the watering hole for the robber barons of the late nineteenth and early twentieth centuries. Glass BRONX 布朗克斯 128 Beefeater 24 Gin sweet vermouth dry vermouth fresh orange juice The Waldorf was as also home to Johnnie Solon, famed barman of those days, who created the Bronx Cocktail, shortly after a trip to the newly opened Bronx Zoo. The name? No, it wasn t named after the borough or the river so-called. I had been at the Bronx Zoo a day before, and I saw, a lot of beasts I had never known. Customers used to tell me of the strange animals they saw after a lot of mixed drinks. So I thought of those animals, and called it a Bronx. (Waldorf bar Book - Page 42) WALDORF 128 Town Branch Rye Whiskey sweet vermouth absinthe bitters Albert Stevens Crockett, author of the Old Waldorf Bar Days (1931), calls for equal parts of absinth, sweet vermouth and whiskey. The drink was one of the signatures of the Waldorf Astoria bar and it remains a fantastic cocktail. SHANGHAI CLUB 108 Beefeater Gin goji berry liqueur pressed lemon sugar egg white Homage to our history, Long Bar opened in 1911 at the Shanghai Club. The drink is inspired on the pre-prohibition Cover Club Cocktail. In his Old Waldorf Bar Days, Albert Stevens Crockett credits the drink to an Algonquin Round Table sort of group called the Clover Club. Originally the cocktail was made with Raspberry syrup; at Long Bar we use Goji Berry Liqueur to enhance a Chinese touch
